Delicious cottage pie recipe

One of the nice things about spending more time at home has been the cooking. While much of it has been focused on baking with nine-year-old POD, we had to share this cottage pie recipe as it’s SO good! It makes enough for around six large portions which is great if you want seconds.

Ingredients

  • 1lb beef mince
  • 8 potatoes
  • 6 carrots, chopped
  • 2 onions, cut thinly
  • Salt, pepper
  • Clove of garlic
  • Thyme
  • Bisto beef stock (1 pint)
  • Two knobs of butter
  • Splash of milk
  • Grated cheese for topping

Method

Peel and chop the potatoes, put in a saucepan with a little salt and leave to boil. Prepare the carrots, onions and garlic.

Brown the beef mince with a little oil, adding the vegetables, onion, garlic, thyme, salt and pepper. Add the beef stock and simmer for around 20 minutes.

When the potatoes have boiled, drain and mash with the butter and milk. Once nice and soft, spread across the top of the cottage pie. Sprinkle some grated cheese on top.

Oven cook the cottage pie at 200 degrees for fan ovens (220 degrees for conventional or gas mark 7) for 20 minutes.

Serve with peas for a delicious home-cooked meal.
